Whole grain maple syrup cinnamon bun recipe

Ingredients:

  • 185 ml sugar-free almond milk
  • 7g dried active yeast
  • 2 tablespoons maple syrup
  • 1 tablespoon flax seed
  • 1 tbsp coconut oil,
  • 150 g dandruff flour
  • 160 g white flour
  • 1 tsp powdered cinnamon

For fill:

  • 90 grams of walnuts
  • 2 ripe medium bananas
  • 4 dates
  • 1 tbsp powdered cinnamon
  • 2 tablespoons maple syrup
  • 1-2 tbsp almond milk
  • 75 g cream sugar

Preparation:

  • To make the dough, heat the almond milk warmly, then combine it with yeast and maple syrup in a small bowl. Leave the yeast for about 5 minutes.
  • Meanwhile, stir the flax seed in a large bowl into 3 tablespoons of water and leave for 1-2 minutes.
  • Melt the coconut oil, then add the flours, cinnamon and 1/4 teaspoon sourtted sea salt to the flax seed mixture. Stir slowly in the yeast mixture.
  • Bring the mixture to the consistency with your hand. Place the dough on a slightly floured surface and knead several times.
  • Put the dough in a greased bowl, cover it with a towel and rest for an hour.
  • In the meantime, prepare the filling materials. Fry the walnuts in a oil-free pan. Undress the bananas and add the date palm.
  • Put some of the fried berries to one side and add all the fillers to a blender, then stir until smooth.
  • Preheat the oven to 180ºC / 4. Lubricate a 20 cm x 20 cm oven bowl with a little coconut oil.
