Ensalada de langosta (Lobster Salad)

ENSALADA DE LANGOSTA

Basic ingredients: 1 piece lobsterMixed salad leaves4 cherry tomatoes1/2 avocado50 g cucumber25 g sweet corn2 pieces of white asparagus2 tbsp extra virgin olive oil1/2 tbsp white wine vinegar2 litres of water250 g salt1 lemon4 bay leavesPreparation:Boil the lobsters in a saucepan with 4 liters of water, salt, 1 lemon and 3 bay leaves for 15 mins approximately.Once the lobsters are cooked cool them in a bowl with cold water and ice cubes.In a long plate put the salad (cherry tomatoes, avocado, cucumber, sweet corn and asparagus). Season the salad with vinegar, the extra virgin olive oil, some mild fresh herbs, salt and pepper.Finally, put the lobster a dish and decorate with some slices of lemon and a sprig of parsley.
