Recipe: Squid with potatoes
RECIPE: SQUID WITH POTATOES
Basic ingredients
1kg squid cut into strips
2 cloves of garlic crushed
1kg potatoes
1 medium onion finely chopped
olive oil
fresh basil chopped
1 glass of white wine
salt and pepper
Steps:
Put the onion and crushed garlic in a large pan and cook slowly over a low heat for 5 mins
Add the squid (in strips) and the glass of white wine and boil for 15 - 20 mins over a medium heat
Slice the potatoes (about 1cm in thickness) and fry them separately for 2 mins only
Add the fried potatoes to the pan and leave the mixture to boil until the squid is soft and the potatoes cooked
Season with salt and pepper
Place the mixture in a preheated serving dish and garnish with parsley
