Squid with potatoes



INGREDIENTS:
  • 1 kg. of clean and cut-up squid

  • 1 kg. of potatoes

  • olive oil

  • 1 glass of white wine

  • 2 chopped garlic cloves

  • 2 chopped chives

  • Chopped parsley

  • Salt

PREPARATION:
  • First, put a few of olive oil, salt, garlic and chives into a pan and cook it for 20 minutes.

  • Then, add the squid, the white wine and a few more of salt. Now, cover the pan and let it for approximately 45 minutes.

  • While the stew is done, peel the potatoes and cut into slices of a 1 cm of size. Prepare a pan with oil and fry the potatoes, but in a way that caught color, but they are slightly firm inside

  • Once fried potatoes, add to the stew of squid and let it soak in the juice and finish cooking them. They must take at least 20 minutes more. Finally add a pinch more salt.

  • It is found that squid and potatoes are tender. The stew should not be neither too soupy or too thick. If there is too thicky, is lightened with a touch of white wine or water and if the set is too light, break and crush some potatoes for the starch contained in them fattening sauce.

  • Before serving, it gives the whole a slight boil and sprinkle with chopped parsley.
