RECIPE: SQUID WITH POTATOES



Basic ingredients
 
  • 1kg squid cut into strips
  • 2 cloves of garlic crushed
  • 1kg potatoes
  • 1 medium onion finely chopped
  • olive oil
  • fresh basil chopped
  • 1 glass of white wine
  • salt and pepper

  • Steps:
    • Put the onion and crushed garlic in a large pan and cook slowly over a low heat for 5 mins
    • Add the squid (in strips) and the glass of white wine and boil for 15 - 20 mins over a medium heat
    • Slice the potatoes (about 1cm in thickness) and fry them separately for 2 mins only
    • Add the fried potatoes to the pan and leave the mixture to boil until the squid is soft and the potatoes cooked
    • Season with salt and pepper
    • Place the mixture in a preheated serving dish and garnish with parsley
